Carrot
I rank carrots with garlic and cayenne in my herbal arsenal of good health. The vegetable is rich in vitamins A, B, and C, and contains small amounts of E and K, as well as phosphorus, potassium, and calcium.
Carrot juice is energy! Use carrots to try to cleanse the system of various impurities, aid many eye problems, relieve most skin problems, and help overcome many glandular disturbances. Use it every day if you are trying to regulate a menstrual period.
If you have a problem with sinus or acne, or skin eruptions, or strange eye problems that may be nutritional, your vitamin A need may be higher than the national average.
I recommend a centrifugal juicer for every family; even if it isn't used every day, it is extraordinarily useful to have to use during periods of stress, fatigue, and illness of any kind. A small glass of pure carrot juice every day will be a strong health aid to any family, especially one prone to respiratory diseases.
We eat a lot of grated carrots, too, and now with the new food processors this grating is no longer a chore. Add lemon, oil, and garlic to this nutritious salad and serve it once or twice a week for the family.

Infant Diarrhea
Add peeled (if nonorganic source) carrots to every soup. Carrot soup is an unsurpassed home remedy for infant diarrhea. It works by preventing the severe loss of body fluid and by supplying water to overcome dehydration. Cooked carrots are high in potassium (this mineral is needed during any illness), phosphorus, and sodium, and also contain pectin, a valuable antidiarrhea aid. The cooked carrots in soup coat the inflamed small bowel, soothe it, and thus promote healing. The soup increases peristalsis, slows down any diarrhea creating bacteria growth, and also overcomes the need to vomit. Use carrot soup for an entire week, and meanwhile, as soon as the infant seems ready for additional food, you can add boiled rediluted skim milk and ripe or dried pectin rich bananas to the diet.
Poultice For a healing and antiseptic poultice for use on cuts, wounds, abscesses, and inflammations, use either raw, grated carrots or cooked, mashed carrots.
Powder as Universal RemedyAnother exceptional and fairly little known way to use carrots is in the dried state. Grate carrots into the tiniest pieces, and dry them on white paper or in your home food dryer. (You can rig up your own in a large wooden box with shelves and one or two low wattage light bulbs.) This concentrates the useful vitamins and minerals contained in the carrot. Store this material in a dark, labeled jar. These carrots can be added to soups to restore body energy, or used in a capsule or in pill form (add to scrambled eggs or roll in cream cheese) as a potent remedy to overcome infection, glandular disturbances, headaches, or joint problems. In fact, whenever you feel unwell add some of these dried carrots to your other foods, herbal drinks, vegetable juices, or soups. It has strong healing abilities. This is good, cheap, and effective medicine.
